Spinach & Feta Bobota
Let's start! In a pot add the water, olive oil and salt. Bring to a boil on high heat. When the water starts boiling add slowly the cornmeal and the baking powder whisking continuously and scraping the sides of the pan so it doesn't get stuck. Bring the heat to low and keep whisking until you have a smooth thick mash. Remove from the heat and let it cool. While it is cooling you can prepare the filling. Place the olive oil and spinach in a a pot and sauté on medium heat until the onions are soft. Add the spinach and mix. Cover and let the spinach cook until reduces in size. Remove from the heat and crumble the feta cheese with your hands and add it in the spinach. Mix well.
Preheat the oven to 190 degrees Celsius. Take a round baking tray about 40cm in diameter. Brush it with olive oil. Take half of the cornmeal mash and make a thin layer at the bottom of the tray. Add the spinach filling evenly. Add the rest of the cornmeal mash on top and even it out as much as you can. Drizzle with olive oil and place it in the oven. Bake for 1 hour and 15 minutes or until golden brown on top and bottom. Let it cool a little before cutting into square pieces. It can be served warm or cold. Enjoy!
