Country lamb

Let's start! Preheat the oven to 150 degrees Celsius.
Peel and cut the carrots lengthwise in sticks around 2cm thick. Peel the celery root and cut it in pieces around 5cm thick. Peel the potatoes and cut them as well around 5cm thick. You can keep the shallots as they are but if you think they are too big you can cut them in half.
Take a piece of aluminum foil large enough to make a pocket that would fit all these ingredients. Place it on a flat surface. Add a layer of baking sheet. Place the piece of lamb in the middle and all the vegetables around it. Add the herbs on top, the salt and pepper, the lemon juice plus the zest and the olive oil.
Fold first the baking sheet and close it making a rectangle as shown in the picture. Fold the aluminum foil tight. Now you have one pocket. You can make more if you like but this should be more than enough for one person. Place the pocket on a tray and into the oven it goes! Bake for 2 hours. Remove from the oven and open the pocket carefully. Roast for 15 minutes more at 200 Celsius. Remove from the oven, let it rest for 10 minutes and serve. Enjoy!
