Fish in lemon balm broth
Let's start with the broth! In a pan bring to a boil the water and once it is boiling add the dried lemon balm. Keep boiling for one minute, then turn the heat off, cover and let it stand for 5 minutes. In the meantime, slice the garlic. In a wide bottom pan, add the olive oil and the garlic and turn on low heat just to infuse the oil with the aroma of the garlic. Add the lemon juice and the star anise and stir a little. Add the salt and pepper and finally, add the lemon balm broth after you have strained it. Turn the heat to high and bring to a good boil. Once it is boiling, turn the heat to medium and add the whole fish. Cover and boil on medium heat for 15 minutes (depending on the size of the fish), while using a spoon to pour some broth over the fish once in a while. Don't overcook the fish. Once the fish is cooked remove it from the pan. Add the mustard and stir for one minute while boiling. The mustard will give it a nice taste plus, it will act like corn flour and will thicken the broth a little. If you have used the whole fish you can now fillet it and place the fillet in a plate. Pour the broth over them and serve! Enjoy!
