Green fava beans
Start by cleaning your beans. Cut the edges and remove the side strings by pilling the sides of the beans. You can cut the beans in half or leave as is. I prefer leaving them as they are.
Heat the olive oil in a pot that has a wide bottom. You need the beans to have space and not get mashed. Add the onion and sauté until they are soft. Turn the heat to low and add the fava beans and dill. Add salt and pepper and move the pot in circles so that the oil goes all over the beans. Don't use a spoon to mix because you will break them. Add water to the pot slightly covering the beans. Turn the heat to high until it starts boiling. Once it is boiling turn the heat to low and cover.
Takes about an hour for the beans to cook. If you need to add more water do so but remember that at the end you want to be left with oil and sauce not water and sauce. Once the beans are soft to touch remove from the heat and let them cool a little before serving. Serve on a plate with a big spoonful of greek yogurt on top!
