Hilopites
Let's begin! In a big bowl put the milk, eggs and salt and beat well with a whisk until smooth. Slowly add the flour and whisk until the dough is thick, then use your hands to work the dough. Work the dough in the bowl and then transfer it on a flat surface and knit there until the dough is smooth, elastic, but does not get stuck to your hands. Cover it with a membrane and let it rest for 15 minutes.
Take the dough, form a big ball and cut the dough into 8 pieces, like a pizza. Take each piece and with a rolling pin flatten it and open it to a diameter around 50cm, and thickness around 2mm. Use flour to dust so the dough does not glue to the pin. Slice each sheet vertically in strips around 2cm in thickness. Then horizontally in three parts. Each pasta should be 2cm thick and about 10cm long. They don't all have to be the same. After all they are home made so they need to show it. Dust them with flour and set them aside. Do the same with all the pieces of dough. Once you are done take the pasta strips and spread them out on a flat clean surface - preferably a clean table cloth - to dry. Cover them with another sheet and let them dry for 1-2 days depending on the humidity. If you don't want to wait for this long you can dry them in the oven. Place them in a tray and put them in the oven at 100 degrees celsius for 15 minutes or until they are dry. Watch out because depending gone the oven they can burn easily.
After they are dry place them in an airtight container and store them away. Keep them in a cool, dry place. Look out for recipes that we will post in the future using this type of pasta!
