Zucchini fritters
Ingredients for 6 people:

Let's start! In a large bowl grate the zucchini using the coarse part of the grater. Chop the onions and all the herbs thinly and add them in the zucchini. Add all the other ingredients and grate the kefalotyri or cheddar in the coarse grater too and add them to the mixture. Crumble the feta with your hands and add it as well. Add all the ingredients and mix well.
In a frying pan add enough oil to cover the bottom. Heat the oil on high heat. Once the oil is hot enough-around 150 celsius-use a tablespoon and spoon the mixture in the oil. Don't add too many as they will get stuck with each other.
Fry until golden brown and turn over to fry the other side. Remove once both sides are golden brown. Place them on a plate that you have covered with paper towel to absorb all the oil.
To serve you can put them on a plate and add yogurt as a dip. Enjoy!
