And who doesn't love BBQ! I am sure that even vegans like bbq. I think that this charcoaled, smokiness makes everything taste so much more delicious. Meat, fish or vegetables are yummy on the barbie! I don't know if it is only the smokiness that makes everything taste better, or maybe it is the anticipation of waiting for the food to be ready, could be the company of people, because we all know that BBQ means one thing well two things: party of minimum 4, and alcohol. So maybe the alcohol makes it taste good as well :) Every country has in my opinion a unique way to BBQ. When it comes to BBQ people tend to think of BBQ sauces, sweet and tangy! Yummy! When I was in the states I used to LOVE those baby back ribs! Love them still! The meat falls off the bone...I tried so many times to cook those and never have I managed to do it. I guess some things are not meant to be copied...who knows... So we decided to do our kind of BBQ. Greeks usually BBQ different kinds of meat and ground beef but they are all plain. What I mean by plain is that there are no sauces the go on top of the meats. What they do to tenderise the meat is use kiwi and onions that they grate. They place the meat in that "sauce" and let it marinate for 24 hours. Then they add salt, pepper and oregano and grill them. That's one way to tenderise beef or pieces of lamb that come from a large sheep as in large in weight. Because the larger the sheep the less tender it is. In my mom's village they used to tenderise the meat that made souvlaki this way too. Of course there are other methods of BBQ in Greece other than just placing meat on the grill, like lamb cooked facing the fire. This is a way of cooking a large piece of lamb that is skewered in a large stick. There is fire in the middle and the large skewers are placed opposite the fire. Thus, facing the fire. So for our BBQ there is no recipe that follows but just some ideas that maybe you can use in your next BBQ party. So one is as I said before the marinade. Depending how much meat you have you can use 2-3 kiwis and one onion, grate them and add them to the meat the night before to tenderise it. When ready to grill, scrape the marinade off the meat, add olive oil, salt, pepper and oregano and grill. Greeks have a tendency to overcook their meat...no rear or even medium in Greece! But we like it medium so we grill the meat to a medium-rear. Simplicity is, as I mentioned before, something that characterises greek food. So just get some vegetables (carrots, eggplant, zucchini anything you like) and cut them thin and grill them. Put them on a plate and add salt and pepper, olive oil and some balsamic vinegar and oh yumminess!!! As for the carb part we like to eat pita bread. We put some olive oil, salt and oregano and we grill it till golden brown. And of course our sauce is yogurt with garlic. Add one clove of garlic to about 2 cups of yogurt. Put some olive oil, a pinch of salt and mix it and them serve it as a dip. You can dip the pita bread or the meat in it! Our BBQ although very simple turned out to be delicious!
