QuiNOA & SMOKED MACKEREL
Ingredients for 2 people:
For the vinaigrette sauce:

Let's start!
Put the 2 tbs of olive oil in a pan and on high heat. Add the mackerel and saute until golden brown. Remove from the heat place the mackerel on a plate and shred it with the help of two forks. Return to the pan, add the quinoa and place the pan back on high heat turning the quinoa mix for two to three turns.
Place the mix in the bowl and add all the spices but not the herbs.
In a separate bowl prepare the vinaigrette sauce by whisking all ingredients together.
Add the vinaigrette to the quinoa mix, cover and place in the fridge.
Finely chop the onions, tomatoes, capers, and herbs and mix. Add the balsamic vinegar, 2 tbs of olive oil, and salt and mix.
Place the quinoa mix on a plate, add the tomato mix on top and finally the zucchini.
Serve always cold and with a side of ouzo if you are fond of!
