Briam
Preheat the oven to 170 Celsius. Start with layering the potatoes on the tray to cover the bottom completely. Add the zucchini on top. Slice the spring onions thinly and add them on top of the zucchini. Slice the garlic cloves and sprinkle them over the dish. Add half of the parsley all over the tray. Add the tomato sauce on top and add the rest of the parsley. Now you are done layering the ingredients. Drizzle the olive oil over the layers so it is equally distributed. Add salt and pepper and finally pour the water in the tray. Cover the tray with aluminium foil and place in the oven. The total cooking time is 1 hr and 45 minutes. The last 25 -30 minutes remove the foil and let it brown on top. Remove from the oven and let it cool a little.
Serve it in two layers. Take one layer of the mixture, place it on the plate and then take another one and place it on top of the first one. Drizzle with olive oil from the tray. Accompany the dish with a slice of bread drizzled with olive oil and sprinkled with oregano before toasting it.
