The healthy slaw
Let's start. It will be easier if you use a food processor, but if you don't have one no problem, you will just have to do extra work.
Get a big bowl, large enough to fit all the ingredients and more, since you will have to mix the salad in there.
Start with the cabbage. Slice it thinly either in the food processor or using a knife. But it in the bowl. Then grate the carrot. Use the thick rough side of the grater or you can use the food processor and grate it roughly. Put it in the bowl with the cabbage. Now for the pepper. You will need to dice this in small pieces. First slice it in thin slices, about 2cm thick, and then dice it. Once you are done, in the bowl it goes too. Finally the celery. You just need to slice it thinly and add it in the bowl.
For the sauce, put all the ingredients together in a bowl except the olive oil. Mix them well with a whisk and slowly add the olive oil while whisking. Once the sauce is thick and creamy add it to the salad. Use your hands and mix the salad well, squeezing it a little. You can serve it immediately or keep it in the fridge. If you keep it in the fridge you will notice that there is more liquid when you go to serve it, like it happens with the coleslaw. Just mix and drain a little and then serve it. We think that this salad is better if it stays in the fridge for a couple of hours. Enjoy!
