Cuttlefish plaki
Let's start by cutting the cuttlefish in big chunks of about 5cm thick. Use a pressure cooker since it will make things easier and faster. In the pressure cooker or a pot put the olive oil and the allspice and heat on high heat. Add the cuttle fish and stir to cook slightly for about 1 minute. Add the tomato sauce, the 1tsp salt and 1/2 tsp pepper and stir again to coat evenly. Add the water and bay leaves and put the lid on he pressure cooker. Cook for 10 minutes on the pressure cooker after the valve has risen. In a regular pot you will have to cook on medium heat till the cuttlefish is slightly tender.
While the cuttlefish is cooking prepare the onions. Cut them in thick slices about 4cm thick. Place them in a pot with water in it and add the rest of the salt (1/2 tsp) and bring to a boil. Once it is boiling, reduce the heat to medium and cook for five minutes. Drain the water and place the onions in a baking tray. Make sure the tray is large enough and deep so they are spread out. Once the cuttlefish is done add it to the tray and mix carefully with a spoon so the onions are coated with the sauce. Place it in a preheated to 180 degrees Celsius oven for 1 hour and 15 minutes. Don't mix them again. When it is done remove form the oven and let it rest for 10 minutes before serving. Enjoy!
