Cheese stuffed triangles drizzled with honey
Let's start this super easy but so delicious dessert! Take the mizithra or ricotta and the feta cheese and mix them well in a bowl. Add the the teaspoon of olive oil and mix again. Set aside. On a flat surface place one layer of phyllo dough and brush slightly with olive oil. Add two more layers of phyllo on top. Cut the phyllo lengthwise in half or to make layers of 10cm wide each. Place one tablespoon of the filling about 4cm from the bottom of the layer. Take the bottom and fold to cover the filling. Then take one corner and bring it over the side of the layer. Continue to make a triangle. Make 5 more triangles like that. You can now freeze these if you want and make them at your convenience. Brush them with the egg yolk and sprinkle them with the sesame seeds when you are ready to cook them.
You can either bake them or fry them. Fried, although full of guilt, they are much much better. To fry them, heat some olive oil in a pan on medium heat. Place a couple of pieces depending on the size of your pan and fry till golden brown on both sides. Place on a plate that is covered with paper towel to drain the olive oil. Place in a plate and drizzle with honey when they are still hot. Serve immediately while still warm. Enjoy!
