Married sardines with fava cream

Start with the fava first. It needs time to cool down and time in the fridge as well. If you are using a pressure cooker place all the ingredients in the pot except from the onion and olive oil. In the pressure cooker fava needs around 10 minutes of cooking in low heat after the valve is raised. If you are using a normal pot then bring the water with the salt to a boil. Add the fava, cover and and cook under medium heat for at least an hour or until the fava is cooked. If you need to add more water do so but be careful not to add too much and you will be left with a runny fava. While the fava is cooking roast the garlic head. Cut it on the top, place it in aluminum foil and into the oven at 220 Celsius for 45 minutes. Once it is done remove it from the foil and press it to get the garlic paste out into a plate. After your fava is cooked mash is with a fork or in a blender and put it in a deep plate. Cover with a membrane so it doesn't get a crust on top and let it come to room temperature. After it has cooled down place it in the fridge to make it cold.
Let's move on to the sardines. You can debone the sardines while the fava and garlic are cooking and have them ready but don't cook the sardines until the fava is cold and ready because the concept is to eat the fava cold and the sardines warm. Start by deboning and making butterfly shape out of your sardines. Start at the top, grab the bone and pull it slowly towards the tail. The fish will open into a butterfly shape by itself if you do it slowly. Do the same with all 10 pieces. After you are done it is time to make them a couple! Place them skin facing down and drizzle them with olive oil. Add salt and take a little of the roasted garlic paste and spread it all over in one of the fillets. Add parley and thyme. Bring the other fillet on top and press the sides so the two fish are one. You now have one married couple. Place it in a small baking tray. Continue to make 4 more couples.
Once you are done with all the sardines drizzle them with the olive oil and the lemon juice. Add salt and pepper as well as the oregano. Finally, sprinkle them with parsley and thyme that is left over. Place them in a preheated oven for 15 minutes at 180 Celsius. Once they are cooked remove them from the oven because they will dry if you leave them inside. While the sardines are cooking you can fry the onion that will go on your fava cream. Place the 4tbs of olive oil in small frying pan and put the onion. Cook on high heat until the onion becomes brown. Add salt and pepper to it.
Time to serve your plate. Place some of the fava cream on the plate and put some of the fried onion with the olive oil on top of it. Place how many sardines you like on the plate, drizzle with a little extra virgin olive oil and serve!
