Egg Salad

Ingredients

  • 8 hard boiled eggs
  • 1/2 medium size onion sliced thinly
  • 1 1/2 cup chopped parsley
  • 1/2 tsp salt
  • 1/2 tsp hot paprika
  • 1/4 tsp pepper
  • 45ml extra virgin olive oil
  • juice from one lemon



Let's start!
Peel the eggs and cut them lengthwise in half.  Cut them again in half lengthwise and finally cut the pieces in half horizontally.  Add them in a bowl.  Add the rest of all the ingredients and with a spoon mix them lightly.  Cover the bowl with a plastic wrap and place in the fridge for half an hour.  Place in a plate and drizzle with olive oil and sprinkle with paprika.  You can enjoy it with bread!  It's that easy :)
