Stuffed grape leaves

Ingredients for 8 people:

  • 48 pieces of grapes leaves (pickled a jar are fine)
  • 260g calrose rice
  • 100g green onions
  • 50g mint
  • 40g parsley
  • 40g dill
  • 80ml + 40ml extra virgin olive oil
  • 50ml + 25ml lemon juice
  • 1 tsp + 1/4 tsp salt
  • 1/4 tsp pepper
  • 800ml water

OK let's start!  Place the rice in a bowl.  Chop the green onions thinly and add them to the bowl.  Chop the herbs thinly as well and add them too.  Careful, they all have to be chopped thinly so they cook evenly.  Add the 80ml of olive oil and the 50ml of lemon juice.  Add the 1 tsp of salt and the pepper and mix well.  Set them aside.  
Take the grape leaves out of the jar carefully so you won't tear them apart.  Wash them well and pat them dry.  Choose the ones that are damaged and place them in the bottom of your wide bottom pot that has also a lid.  
Now let's get rolling! 
Take one grape leaf, remove the little stem and place in on a flat surface with the good side facing down.  The good side in the greener side.  Place it in such a way so the place where the stem was faces toward you and the tip is on the top like shown in the pictures.  Take one teaspoon of the rice filling and place it on the leaf in the middle. Roll the bottom once, then roll one more time tight.  Take the right side and fold it towards the left, and the left towards the right.  Roll again toward the top till it is a nice tight stuffed grape leaf.  Place it in the pot starting from from the outside and moving towards the middle of the circle as you make more.  All should be placed tight next to each other.  Please do see the pictures.  Now depending on your pot you might need to move to another layer.  Just keep building layers if you need to.  If you have moved to another layer but you have not filled the whole surface with stuffed grape leaves, like it happened to me, you can fill the empty place with grape leaves that are not in a good shape.  
Once you are done, pour the water slowly in the pot.  Add the rest of the olive oil, lemon, and salt.  Take a round plate and place ion the pot to keep the grape leaves submerged in water.  Put the lid on and place the pot on the stove on high heat.  Once it starts boiling reduce the heat to medium low and cook for 40 - 45 minutes.  When they are done, remove the plate carefully and take them out of the pot and in a plate.  They can be eaten warm or served cold with yogurt.  You can store them in the fridge.  Enjoy!
