Peas with feta cream
Let's start! In a deep frying pan with a lid put the olive oil and place it on the stove on medium heat. Finely chop the onion and put it in the frying pan until soft but not brown. Add the peas and stir while adding all the dry ingredients. Increase the heat to high and add the wine. Cook for about a minute for the alcohol to evaporate and add the lemon. Finally add the water and the dill and bring to a boil. You might need to add less water depending whether you use fresh or frozen peas. If you use frozen peas then use half the amount of water. Cover and reduce heat to medium. Simmer for about an hour (half hour if you use frozen peas) until the peas are tender. Add the butter and stir until there is almost no liquid in the pan.
Feta cream:
While the peas are cooking you can make the feta cream. In a small food processor add the feta and a little of the whipping cream and blend until creamy. In a separate bowl add the whipping cream and with a hand mixer whip until it becomes thick. Add the feta cream and mix well. Store it in the fridge.
When the peas are ready serve them hot with a spoonful of the feta cream on top and a drizzle of extra virgin olive oil.
