Oh so hot! The weather in UAE is starting to become unbearable really! We have been here for the last six years, but this year I think the temperature has risen to the unbearable levels much sooner...or that's what I say every year... Fact of the matter is it is HOT! And I don't mean like a heat wave hot. Noooo! It is constantly between 40-45 degrees Celsius. Before I came here, I had heard stories of how hot it is in the dessert during the day and how cool it gets during the night. Yeah...here...it is always hot! Day, night, doesn't matter.
Anyways, enough with the how hot it is getting here. Let's move on to what we could eat that would be refreshing, to cool us down. When it is this hot, what I like is a refreshing salad. A salad that is what we call in Greece "alive". I know it sounds funny, but what it is basically saying is that it is fresh and with color. Light is the key word since you don't want dressings that are too heavy. One such salad is what I call it the healthy slaw. It has all the ingredients and more that the coleslaw has but instead of soaking them in mayo and sugar, we put a different type of dressing that is refreshing and on the lighter side. The healthy slaw
Ingredients for 3 people:
- 300g cabbage
- 200g red bell peppers
- 200g carrots
- 100g celery
- For the sauce:
- 70ml extra virgin olive oil
- 40ml lemon juice
- 30g honey
- 15g mustard
- 1/2 tsp salt
