Poor man's moussaka...

Hello again!  Good Tuesday today and we continue on the vegetarian dishes.  Today we decided to cook a vegetarian version of the famously known moussaka.  Actually the vegan version of moussaka.  Just because we called it like that it doesn't mean it resembles moussaka at all other than the fact that it contains potatoes, but we thought that the way it is layered and served gives a slight resemblance to the popular dish.
Also called briam - in turkish - it is mostly a summer food because it contains summer type of vegetables like potatoes, zucchini, and green onions.  It is accompanied well with feta cheese but can be equally good eaten with just bread.  We don't know if this is purely a turkish dish or greek...or both.  After so many centuries that these two nations were together it is difficult to tell.  But food is about bringing people together instead of dividing them so who came up with the recipe doesn't really matter.  What matters is that it tastes delicious and that both nations cook it in their own unique way.  
I started very organised for this recipe.  As you will see in the recipe pictures everything was in order.  Till....ugh...I forgot to take the most important picture of all.  I wanted to show you how the ingredients are placed in the baking tray, layered, and in what order.  While I did take a picture of the first two layers I don't know how it all happened and suddenly the tray was in the oven and I was left with no pictures...yep...I forgot :(  So I will be very descriptive and when I cook it again I will be adding to the pictures.  My apologies for that...  With pictures or not when I came home the dish was half gone...Kostas came back form work and he said that it tasted very good.  I think I will trust him because he rarely eats zucchini.  I hope you enjoy it as well.  I am not so much of a meat eater so this week is going well for me because of all the vegetarian dishes.  And where they lead to...that is also very nice...but that's a different blog entry that we will be posting on the weekend.  For now enjoy this vegetarian dish!

Ingredients
  • 350g potatoes cut in round slices 3cm thick
  • 250g zucchini cut in round slices 2cm thick
  • 3 spring onions
  • 2 garlic cloves
  • 2 handfuls of chopped parsley
  • 150g tomato sauce
  • 80ml extra virgin olive oil
  • 150ml water
  • 1 tsp salt
  • 1/4 tsp pepper

    Greek cuisine has a long tradition and its flavors change with the season and its geography. Greek cookery, historically a forerunner of Western cuisine, spread its culinary influence - via ancient Rome - throughout Europe and beyond. This trend in Greek diet continued in Roman and Ottoman times and changed only fairly recently when technological progress has made meat more available. Wine and olive oil have always been a central part of it and the spread of grapes and olive trees in the Mediterranean and further afield is correlated with Greek colonization.
